Our good friend (and head chef at The Vines Siete Fuegos restaurant) Francis is the most famous chef in South America, and one of the world’s great experts on cooking with open fire. He has opened several restaurants and written several books, all centered around this unique expertise. He has also been featured on numerous TV programs, as well as the most memorable episode in the Netflix original series Chef’s Table. And of course, his ineffable personality also contributes to his enormous appeal and fame.

Aaron and his wife Stacy had no idea what they were getting themselves into when they opened up a small barbecue trailer on the side of an Austin, Texas interstate in 2009. Today, crowds stand in line for hours for a taste of his mouth-watering brisket, and Franklin Barbecue has been celebrated by everyone from Jimmy Kimmel to Anthony Bourdain to President Obama. Aaron is the recipient of the James Beard Award for Best Chef and has also been inducted into the American Royal Barbecue Hall of Fame for 2020. He is also the co-author of New York Times bestselling books, Franklin Barbecue, A Meat-Smoking Manifesto; Franklin Steak; and Franklin Smoke: Wood, Fire, Food. Aaron will be building a custom smoker for us to learn on during the summit.

You won’t just learn; you’ll get your hands dirty, live the Argentine asado and Texas barbecue tradition, becoming a pivotal part of this fiery journey under the guidance of the greats.

WINEMAKING
As part of this experience, you will partake in an exclusive winemaking session led by The Vines’ wine director Mariana Onofri and our expert winemaking team. You’11 delve into the art of blending, creating your own signature Malbec-based wine from The Vines’ expansive 900-acre vineyards. With a palette that includes not just Malbec but also our Uco Valley specialty Cabernet Franc, and upon request a selection of white and additional red grapes, your creation will be as unique as the experience itself. These wines, celebrated for their deep hues, robust fruit and floral notes, are perfectly balanced with the elegance and freshness bestowed by the Uco Valley’s high-altitude climate.

WELCOME PARTY
Dive straight into the fun with a welcome cocktail or glass of wine in hand. Get your taste buds rolling with an orientation wine tasting, followed by a sumptuous welcome dinner. It's the perfect start to our epic adventure.
day 2
FIRE with FRANCIS MALLMANN
Don your aprons for a day of culinary mastery. Sharpen your skills with a knife and butchery demo, then whip up some delicious Argentine empanadas - which, yes, we'll devour for lunch with some local boutique wines. The afternoon heats up with our “siete fuegos” (seven fires) training, where you'll learn to master cooking over flames with Francis and his team. Cap it off with a fireside chat with our chef legends, followed by a feast of our day's work and a lively Argentine tango lesson.

TEXAS BBQ with AARON FRANKLIN
Aaron Franklin takes the stage with his BBQ master class, covering everything from choosing the right smoker, wood and best cuts of beef, to mastering smoking techniques and perfecting his famous sauces and sides.
day 4
ANDEAN ADVENTURES & WINE
Embrace the great outdoors with a choice of horseback riding through the Andes or hitting the trails for a hike. Or, get hands-on at The Vines of Mendoza winery, crafting your very own Malbec blend. After a full day of brisket on the smoker, our day ends with a spectacular Franklin BBQ dinner under the stars.

Once you land at the Mendoza airport, The Vines Resort & Spa in the Uco Valley is located 1.5 hours away by car.
