Like Never Before

This is so much more than a wine trip — it’s a once-in-a-lifetime journey into the beating heart of Burgundy, guided by one of the world’s foremost Burgundy experts, La Paulée founder Daniel Johnnes.

Over five unforgettable days, you’ll walk storied vineyards in villages like Corton-Charlemagne, Volnay, Puligny-Montrachet, and Gevrey-Chambertin; taste wines (often in the private cellars) of iconic domaines like Bonneau du Martray, Domaine Leflaive, Domaine Mugneret-Gibourg, Domaine Méo-Camuzet, Domaine Duroché, Domaine Fourrier, Domaine Michel Lafarge, Domaine Yvon Clerget, Domaine Coche-Dury, Domaine Georges Roumier, Domaine Armand Rousseau and Domaine Louis-Michel Liger-Belair; and dine with the winemakers themselves at Burgundy’s best tables – from Michelin-starred bistros to hidden village gems.

With luxurious accommodations at Maison 1896 and Daniel’s insider guidance, this is a journey woven with moments of pure magic – the kind of experience only a handful of travelers will ever know.

THE ITINERARY

DAY 1 – MONDAY, APRIL 6

Bienvenue en Burgundy

Welcome to Burgundy! Whether you arrive by TGV from Paris or through nearby airports like Lyon–Saint Exupéry or Paris CDG/ORY, your journey ends in Beaune — the beating heart of the Côte d’Or. Check into our home for these 5 days, Maison 1896, a luxury 16-room boutique hotel and restaurant housed inside a lovingly restored, historic 1896 building. Located in the ancient village’s historic center, it’s the perfect base from which to discover the region’s legendary vineyards and table culture.

Discover Burgundy tasting and Dinner at Caves Madeleine

One of Beaune’s most beloved restaurants, Caves Madeleine offers a warm, joyous atmosphere where locals and winemakers dine side-by-side. Tonight, it will belong only to us. We’ll be introduced to this iconic region by our friend and guide Daniel, everything you’ve never heard, but need to know, about this extraordinary region. Then over a seasonal tasting menu and an expertly chosen lineup of wines, Daniel will give us his unique, approachable perspective on its mythical domaines and wines.

DAY 2 – TUESDAY, APRIL 7

GRAND CRU GOLD & LE CHARME DU CÔTE DE NUITS

Corton-Charlemagne immersion

Our morning begins in the vineyards of Corton-Charlemagne, where the limestone soils and sunlit slopes give birth to some of the most sought-after white wines in the world. That wine is prized for its power, complexity, and long aging potential. Grown on the limestone-rich slopes of the Corton hill, it delivers Chardonnay of both richness and precision – layered with citrus, orchard fruit, honey, and a signature minerality. Named for Emperor Charlemagne, who once owned vines here, it remains a benchmark Grand Cru for Chardonnay worldwide. We’ll explore the vines, tour the cellar, and taste through wines that shimmer with mineral precision, with one of the most respected domaines in the region.

Lunch at PremNord

Owned by the highly regarded Domaine Prieuré Roch and nestled among the top vineyards of the Côte de Nuits, PremNord is a newly opened culinary gem. We’ll enjoy a Spring menu paired with extraordinary wines that reflect the energy and artistry of this part of Burgundy.

Vineyard tour in Puligny-Montrachet

Puligny-Montrachet stands at the heart of the Côte de Beaune, renowned for Chardonnay that epitomizes elegance and precision. Where Corton-Charlemagne is powerful and commanding, Puligny is all about finesse – wines that are taut, mineral, and finely etched, unfolding with citrus, white blossoms, and a touch of hazelnut. Its Grand Crus, including Le Montrachet itself, have set the global standard for purity and refinement in Chardonnay. We’ll walk the vineyards with one of its revered winemakers.

Afternoon break

Return to Beaune to do some shopping or simply take a refreshing nap in your room.

Dinner at Maison du Roy

Inside the historic monument of Les Hospices de Beaune, we’ll share a private candlelit dinner with one of the most storied local winemakers. As the evening unfolds, stories and Grand Cru bottles will be passed around the table, weaving together the flavors and friendships of Burgundy.

DAY 3 – WEDNESDAY, APRIL 8

VOLNAY VERVE & MEURSAULT MAGIC

Vineyards of Volnay

Volnay is one of the Côte de Beaune’s most admired red wine villages, producing Pinot Noir celebrated for its perfume and finesse. These extraordinary wines, from collector’s dream domaines like d’Angerville, Lafarge, de Montille, and Pousse d’Or, are graceful and refined, with vibrant red fruit, floral aromas, and silky tannins that age into exceptional delicacy. We’ll spend the morning with the next generation of winemakers at a highly acclaimed family-run domaine. Between the rustle of the vines and the earthy perfume of the soil, we’ll taste wines that embody elegance and grace.

Lunch & tasting at Le Soufflot, Meursault

Volnay’s neighbor Meursault is famed for opulent, long-lived whites. Chardonnay from Meursault is rich and textured, layered with orchard fruit, toasted nuts, and a distinctive buttery roundness, yet shockingly balanced by fresh acidity. Its Premier Crus and village wines rank among the most iconic in all of white Burgundy. We’ll dive into these wines at this acclaimed Meursault restaurant – both refined and relaxed, the perfect stage for a Meursault wine-paired lunch with a legendary local winemaker. Each course will reflect the season, each wine a window into the craft.

Afternoon break

Return to Beaune for a leisurely afternoon of rest, exploration, or shopping for wine and local delicacies.

Dinner at La Cuverie, Vosne-Romanée

Owned by Domaine du Comte Liger-Belair, La Cuverie is a restaurant and a wine bar, offering refined dishes and an exceptional Burgundy list in the heart of Vosne-Romanée. Tonight our treasures will be selected from this list, and the selection promises to be once-in-a-lifetime.

DAY 4 – THURSDAY, APRIL 9

GORGEOUS GEVREY-CHAMBERTIN & VENERATED VOSNE-ROMANÉE

Morning visit in Gevrey-Chambertin

Our day begins with power and pedigree. The largest and one of the most renowned villages of the Côte de Nuits, producing Pinot Noir of power, structure, and elegance, Gevrey’s wines are dark-fruited and muscular, and built for long aging. Home to nine Grands Crus, including the legendary Chambertin, Gevrey is synonymous with strength and longevity in red Burgundy. At a renowned domaine, we’ll taste wines that combine all the best traits of this sleeper favorite region.

Wine-paired lunch at Mugneret-Gibourg’s Maison de Jacqueline, Vosne-Romanée

Meanwhile, just to the south, today’s lunch spot Vosne-Romanée offers a striking counterpoint, with Grand Cru Pinot Noir of incomparable elegance and perfume. Its wines combine sensuality and finesse – silken textures, exotic spice, and layers of red and black fruit – and are often described as the most enchanting expression of Burgundy. Acquired in 1932 by Marie and Louis Gibourg, this private home is part of Domaine Mugneret-Gibourg’s proud family legacy. Here, one of the family winemakers will host us for a meal that feels more like a gathering among friends than a restaurant experience, with wines of extraordinary grace poured at the table – in other words, a truly unforgettable lunch.

Afternoon and dinner on your own

You’ll have the afternoon off to relax, take a stroll around Beaune, or do some serious wine or other shopping. Ask us for recommendations for dinner or just stay at the hotel for a casual meal.

DAY 5 – FRIDAY, APRIL 10

ROUTE DES GRANDS CRUS & FAREWELL LA PAULÉE DINNER

Optional Morning adventure

Choose between a bike ride through the Route des Grands Crus, passing some of Burgundy’s most famous vineyard sites, or a behind-the-scenes visit to a world-renowned barrel maker.

Lunch at Cellier Volnaysien in Volnay

We will reconvene for lunch at a famously traditional tucked-away spot in the heart of Volnay, the kind of restaurant locals keep to themselves. It’s warm and unpretentious, with a cellar full of hidden treasures and a kitchen that knows exactly how to let Burgundy’s flavors shine. Over seasonal dishes and a few special bottles, we’ll soak in the charm of a place that feels more like a friend’s table than a restaurant.

Afternoon break

Return to the hotel to rest or take a final stroll through Beaune before our grand finale, the most memorable dinner of them all.

Final La Paulée dinner at Bistro de l’Hôtel

Our week concludes with a festive La Paulée-style dinner at this celebrated Beaune institution, where we will have a room to ourselves, and be joined by a small group of our winemaker friends and their world-famous wines. Expect some of the top Grand Cru bottles (with some surprises thrown in), lively conversation, and a joyful toast to our Burgundy journey and the memories we created here.
