THE ITINERARY

DAY 1 - THURSDAY, APRIL 3

ARRIVALS

Welcome to Paso Robles! Whether arriving by car or through nearby airports like LAX (a scenic three-hour drive), San Luis Obispo, or San Jose, your journey brings you to the charming Hotel Cheval – an intimate retreat perfectly suited for our experience.

 

Welcome drink and Orientation Tasting in the hotel wine cellar

Begin your Paso Robles adventure with a curated tasting in the atmospheric wine cellar at Hotel Cheval. Guided by our wine expert Parke Wiegman and joined by a local winemaker, you’ll explore the region’s renowned Rhône varietals and discover why Paso Robles is celebrated as the “second Rhône.” This tasting compares the distinct styles of the Old Guard and New Guard, setting the stage for the days ahead.

 

Dinner in downtown Paso

We’ll take a leisurely stroll to one of Paso’s favorite local haunts, where a delicious, farm-to-table dinner awaits. Paired with hand-selected hidden gem wines from the area, this meal offers a perfect introduction to the flavors of Paso Robles.

DAY 2 - FRIDAY, APRIL 4

TERROIR, TACOS & LIGHT

 

Private tour and tasting at L’Aventure

Meet the extraordinary vision of Stephan Asseo, a French-born winemaker who searched the globe before falling in love with Paso’s Westside in 1996. At his family-run L’Aventure, Stephan’s Syrah, Cabernet Sauvignon, and Petit Verdot blends shine alongside his Rhône-inspired creations, representing some of Paso’s finest wines. We’ll explore his journey, the vineyards, and taste a range of these world-class wines.

 

Authentic taco lunch

Experience the heart of Paso’s culinary scene with a stop at a local taco favorite. Taste the authentic, flavor-packed tacos that reflect the area’s rich Mexican heritage – every bite is as fresh and vibrant as the region itself.

 

Tasting at Thacher

Michelle worked in Silicon Valley; Sherman brewed beer and with his UC-Davis classmate had a small winemaking operation for over 10 years. Then they became so captivated by a Westside Paso Robles property that they bought it, moved their life there and became Paso Roblans. The winery and tasting room opened in 2008. Today the family operation hand crafts true-to-place wines of restraint, and we can’t wait for you to meet Michelle and Sherman, as they pour wines like their Constant Variable GSM blend and their fascinating take on some little known French varietals for us.

 

Sunset viewing at Sensorio Light Show

Arrive at the magical Sensorio Light Show just in time for sunset. With a glass of Paso wine in hand, soak in the mesmerizing interplay of art and nature as the rolling hills are transformed by Bruce Munro’s world-famous Field of Light installation.

 

Dinner at Les Petites Canailles

Cap the evening with a meal at this intimate farm-to-table bistro blending the flavors of California’s Central Coast with French-inspired finesse. Their thoughtfully curated wine list features a harmonious mix of traditional and modern selections, making this a dining experience to remember.

DAY 3 - SATURDAY, APRIL 5

BLENDING & PASO COMMUNITY SPIRIT

 

Blending session with our partner Juan Mercado

Step into the creative world of Juan Mercado, one of Paso Robles’ most innovative winemakers and one of our newest partners. He’ll guide you through a tasting of base wines, Rhone varietals and Tempranillo blends sourced from his favorite vineyards. Under Juan’s expert tutelage, you’ll craft your very own blend, perfectly tailored to your palate and reflective of the Paso Robles terroir.

 

Lunch in downtown Paso Robles

Pause for a relaxed lunch at another local favorite in Paso’s charming downtown. This meal will be perfectly paired with wines from nearby vineyards, celebrating the community’s vibrant culinary and winemaking traditions.

 

Private tasting at Linne Calodo winery

Discover this boutique gem known for saying their wines are “dictated by Mother Nature”. Each one has a fascinating name with a story behind it. Tiny amounts are made and, after a delicious catered lunch, we will have the privilege of tasting through their Rhône-style blends.

 

Rest and relaxation

Enjoy some downtime to unwind. Take a leisurely walk or bike ride or simply relax at the hotel.

 

Pizza party at Juan Mercado’s winery

Our last evening promises to be a delightful one – we’ll convene at Juan Mercado’s winery, where we’ll feast on wood-fired pizzas paired with exceptional wines from Juan’s private cellar. Expect a festive atmosphere as some of Juan’s winemaker friends stop by, bringing their own special bottles to share. It’s the perfect way to wrap up our time together, celebrating in true Paso Robles style with great food, incredible wine and warm company.

How to arrive

The closest airport is San Luis Obispo (SLO – approximately 2.5 hours by car) but guests can also fly into San Jose (SJC – 2 hrs 45 mins by car) or LAX (3 hrs 40 minutes by car). The Vines can help arrange transfers (not included in the trip cost) from any of these airports to the hotel.

Hotel Cheval, Paso Robles’ finest boutique luxury hotel, an intimate 16-room boutique luxury hotel tucked just off Paso Robles’ historic town square.

Winemaking

Originally from Mexico but having grown up in Northern California, Juan Mercado began in the wine business by assisting famed Napa winemaker Pax Mahle. He later founded Napa darling Realm Cellars, which quickly garnered critical adulation and amassed a multi-year waiting list. In 2018, ready for a new adventure, he moved to Paso and started RIISE, buying two local storied vineyard designates and sourcing from other sites in the Willow Creek District. With consulting winemaker Anthony Yount, he now creates surprisingly balanced, texturally elegant wines.
